Ingredients

1 tbsp olive oil
1 yellow onion, chopped
2 carrots, diced
2 celery stalks, sliced
3 cloves garlic, minced
1 cup dried lentils, rinsed
5 cups vegetable broth
1 tsp cumin
1 tsp coriander
1/2 tsp smoked paprika
Salt and pepper to taste
Juice of half a lemon
Fresh parsley for garnish
Instructions

1. Heat olive oil in a large pot over medium heat and sauté onions until translucent.
2. Add carrots, celery, and garlic; cook for 5 minutes until softened.
3. Stir in lentils, broth, and spices; bring to a boil.
4. Reduce heat and simmer uncovered for 25–30 minutes, stirring occasionally.
5. Add lemon juice and season with salt and pepper. Simmer 5 more minutes.
6. Serve hot, garnished with chopped parsley.
Notes

Use red or brown lentils for faster cooking.
