Description

Ingredients

  • 1 fresh baguette
  • 2 cups fresh cranberries
  • 8 ounces goat cheese
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Extra virgin olive oil
  • Chopped fresh parsley or thyme (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the baguette into 1/2-inch thick rounds. Brush both sides with olive oil and place on baking sheets.
  2. In a saucepan over medium heat, combine cranberries, sugar, cinnamon, and nutmeg. Stir until it simmers and thickens, about 10 minutes. Let it cool.
  3. Toast the baguette slices in the oven for 10 minutes, flipping halfway through, until golden brown.
  4. Spread about 1 tablespoon of the cooled cranberry sauce on each slice, then crumble goat cheese on top. Garnish with fresh herbs if desired. Serve immediately.
