- 1 fresh baguette
- 2 cups fresh cranberries
- 8 ounces goat cheese
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- Extra virgin olive oil
- Chopped fresh parsley or thyme (optional)
Instructions
- Preheat your oven to 375°F (190°C). Slice the baguette into 1/2-inch thick rounds. Brush both sides with olive oil and place on baking sheets.
- In a saucepan over medium heat, combine cranberries, sugar, cinnamon, and nutmeg. Stir until it simmers and thickens, about 10 minutes. Let it cool.
- Toast the baguette slices in the oven for 10 minutes, flipping halfway through, until golden brown.
- Spread about 1 tablespoon of the cooled cranberry sauce on each slice, then crumble goat cheese on top. Garnish with fresh herbs if desired. Serve immediately.
