Ingredients

  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt (omit if using salted butter)
  • 1 cup cream cheese, softened (for filling)
  • ⅔ cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • About 1 cup granulated sugar (for rolling)

Instructions

  1. Beat cream cheese, powdered sugar, and vanilla together until smooth. Drop 1–2 teaspoon dollops onto a parchment-lined tray and freeze for 30–60 minutes.
  2. In a bowl, beat the softened butter with brown and granulated sugars until light and fluffy, about 3 minutes.
  3. Mix in the egg, vanilla, strawberry extract, and food coloring until fully combined.
  4. On low speed, mix in the flour, baking soda, baking powder, and salt until just combined, forming a thick dough.
  5. Flatten 2 tablespoons of dough, place a frozen cheesecake dollop in the center, and seal completely.
  6. Roll the dough into a smooth ball and coat in granulated sugar.
  7. Preheat the oven to 350°F.
  8. Bake the cookies for 10–12 minutes until edges are set and centers are soft.
  9. Let them cool completely on the baking sheet to allow the filling to firm up.
