Delicious and easy-to-make strawberry cheesecake roll-ups, perfect for snacks or dessert.

- 6–8 soft flour tortillas (8-inch/20cm size)
- 8 oz (225g) cream cheese, softened
- 1/2 cup (60g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 1 cup (150g) fresh strawberries, diced
- 3 tbsp (42g) butter, for frying
- 1/4 cup (50g) granulated sugar
- 1 tsp cinnamon
- Optional: 1/2 tsp lemon zest
Instructions
- In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy. Add lemon zest if desired.
- Dice the strawberries into small pieces, reserving a few for garnish.
- Lay a tortilla flat, spread about 2 tablespoons of filling in a line about 1 inch from one edge, then sprinkle diced strawberries over it. Roll tightly, tucking in the sides, and repeat with remaining tortillas.
- In a shallow dish, mix granulated sugar and cinnamon for coating.
- Heat 1 tablespoon of butter in a nonstick skillet over medium heat. Cook 2-3 roll-ups seam-side down for 2-3 minutes per side until golden and crispy, adding butter as needed.
- Immediately roll each fried roll-up in the cinnamon sugar mixture to coat.
- Slice each roll-up in half, garnish with reserved strawberries, and dust with powdered sugar if desired. Serve warm.
Notes
Serve warm with chocolate sauce or whipped cream. Store leftovers in an airtight container in the fridge for up to 2 days.
