Instructions
- In a bowl, mix the pureed strawberries, heavy cream, cream cheese, powdered sugar, and vanilla extract until smooth.
- Fold in the crushed shortcake or vanilla cookies.
- Chill the mixture in the refrigerator for about 30 minutes to firm up.
- Once chilled, scoop out small amounts of the mixture and roll into balls.
- Melt chocolate chips in a microwave-safe bowl, then dip each truffle in the melted chocolate to coat.
- Place the truffles on a parchment-lined baking sheet and let them set in the fridge.

Notes
