Description

A refreshing salad combining strawberries, spinach, mozzarella, and a homemade dressing, perfect for brunch or as a starter.


Ingredients

  • 1/4 cup balsamic vinegar
  • 1 tbsp. mayonnaise
  • 1/4 cup olive oil
  • 1 tsp. Dijon mustard
  • 1 tsp. honey
  • 1/4 tsp. coarse salt
  • 10 oz. baby spinach
  • 12 cups fresh strawberries, sliced
  • 1/2 cup red onion, thinly sliced
  • 1620 fresh mozzarella balls (Ciliegine)
  • 1/2 cup candied pecans

Instructions

  1. Make the dressing by whisking together balsamic vinegar, mayonnaise, olive oil, Dijon mustard, honey, and coarse salt in a small bowl or jar.
  2. Preheat the oven to 350°F (175°C). Blot mozzarella balls to remove moisture and place in molds. Bake for 8-10 minutes until softened, then mold and refrigerate.
  3. Assemble the salad by layering spinach, sliced strawberries, and red onion on a platter. Add the mozzarella hearts and drizzle with dressing, then sprinkle with candied pecans.

Notes

For best flavor, use ripe strawberries. Serve immediately after assembly to maintain crispness.
