Description

Warm, soft sweet potato bread that’s simple to make and delicious as a snack or breakfast treat.

Ingredients

Scale
  • 2 cups mashed sweet potatoes
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1/2 cup sugar
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix together the mashed sweet potatoes, sugar, milk, and vegetable oil until smooth in a large bowl.
  3. Combine the flour, baking powder, salt, and cinnamon in a separate bowl.
  4. Gradually add the dry ingredients to the sweet potato mixture, stirring until just combined.
  5. Stir in the vanilla extract.
  6. Pour the batter into the greased loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool before slicing and serving.

Notes

Use well-mashed sweet potatoes for a smooth batter. Do not overmix after adding flour; mix until just combined. Check the bread at 50 minutes and add time if needed. Let the bread cool before slicing to keep slices neat.
