Description
Juicy Turkish chicken doner kebab made with spiced yogurt marinade, oven-roasted to perfection, and served with garlic sauce in warm pita.
Ingredients
1.5 lbs boneless chicken thighs
1 cup plain yogurt
3 tbsp olive oil
2 tbsp lemon juice
4 cloves garlic, grated
1 tbsp ketchup
1 tsp ground cumin
1 tsp paprika
1/2 tsp ground cinnamon
1/2 tsp chili flakes
Salt and black pepper to taste
Instructions
1. Slice or butterfly chicken thighs for more surface area.
2. In a bowl, mix yogurt, olive oil, lemon juice, garlic, ketchup, and spices.

3. Add chicken and coat well. Cover and marinate at least 4 hours or overnight.
4. Preheat oven to 400°F (200°C).
5. Stack chicken in loaf pan or thread tightly onto skewers.

6. Roast for 40–45 minutes until golden and internal temp reaches 165°F (74°C).

7. For crispy edges, broil for 2–3 minutes.
8. Let rest 5 minutes, then slice thinly and serve in pita with toppings.

Notes
Overnight marination gives best flavor.
Use chicken thighs for juicier texture.
Serve with garlic yogurt sauce, pickled onions, and sumac-dusted tomatoes.
You can freeze the marinated raw chicken up to 1 month.
