Description
Comforting Turkish chicken soup with rice or vermicelli, lemon, and herbs. A perfect one-pot meal with deep Mediterranean flavors.
Ingredients
500g chicken thighs (bone-in)
1 large carrot, chopped
1 medium onion, diced
2 garlic cloves, minced
1/2 cup rice or vermicelli
6 cups water
2 tbsp lemon juice
Salt to taste
Fresh parsley for garnish
Instructions
1. Boil chicken in water and skim foam.
2. Add onion, carrot, garlic and simmer 45 min.

3. Remove and shred chicken, return to pot.
4. Add rice or vermicelli and cook 15 more minutes.

5. Stir in lemon juice and season to taste.
6. Garnish and serve hot.

Notes
Use boneless chicken for faster cooking.
To freeze, omit rice and add fresh when reheating.
