Description

A hearty and nutritious Tuscan White Bean Soup that warms you up with a comforting blend of Italian sausage, veggies, and herbs.


Ingredients

  • 1 lb Italian sausage
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups vegetable broth
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 4 cups fresh spinach
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions, carrots, and celery. Cook until softened.
  2. Add minced garlic and Italian sausage, cooking until the sausage is browned.
  3. Stir in vegetable broth, white beans, oregano, thyme, salt, and pepper. Bring to a boil.
  4. Lower heat and simmer for 20-30 minutes.
  5. Just before serving, stir in fresh spinach and cook until wilted.
  6. Adjust seasoning to taste and serve hot.

Notes

Serve with grated Parmesan cheese and crusty bread for a complete meal. Can be refrigerated for up to 4 days or frozen for up to 3 months.
