A hearty and nutritious Tuscan White Bean Soup that warms you up with a comforting blend of Italian sausage, veggies, and herbs.
Ingredients

- 1 lb Italian sausage
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups vegetable broth
- 2 cans (15 oz each) white beans, drained and rinsed
- 4 cups fresh spinach
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onions, carrots, and celery. Cook until softened.
- Add minced garlic and Italian sausage, cooking until the sausage is browned.
- Stir in vegetable broth, white beans, oregano, thyme, salt, and pepper. Bring to a boil.
- Lower heat and simmer for 20-30 minutes.
- Just before serving, stir in fresh spinach and cook until wilted.
- Adjust seasoning to taste and serve hot.
Notes
Serve with grated Parmesan cheese and crusty bread for a complete meal. Can be refrigerated for up to 4 days or frozen for up to 3 months.
