- 1 large sweet onion (e.g., Vidalia)
- Olive oil spray
- 1/2 cup arrowroot powder
- 2 tsp paprika
- 1.5 tsp salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 1.5 tsp sugar (optional)
- 1/2 cup coconut milk
- 1 egg
- 1 tbsp mayonnaise (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
- In a medium bowl, mix together all the dry ingredients.
- In another bowl, mix the wet ingredients.
- Slice the onion into rings about 3/4 inch wide, peel and separate the rings.
- One at a time, dip each onion ring into the wet mix, then into the dry mix, ensuring to tap off the excess.
- Place the coated rings on the baking tray and spray lightly with olive oil on both sides.
- Bake in the oven, flipping after 9-10 minutes and cooking for an additional 4 minutes until golden and crisp.
- Serve warm with your favorite dips.
Notes
For best results, use sweet onions, dry the rings before coating, and do not overcrowd the baking tray.
