Ingredients

  • 1 large sweet onion (e.g., Vidalia)
  • Olive oil spray
  • 1/2 cup arrowroot powder
  • 2 tsp paprika
  • 1.5 tsp salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1.5 tsp sugar (optional)
  • 1/2 cup coconut milk
  • 1 egg
  • 1 tbsp mayonnaise (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. In a medium bowl, mix together all the dry ingredients.
  3. In another bowl, mix the wet ingredients.
  4. Slice the onion into rings about 3/4 inch wide, peel and separate the rings.
  5. One at a time, dip each onion ring into the wet mix, then into the dry mix, ensuring to tap off the excess.
  6. Place the coated rings on the baking tray and spray lightly with olive oil on both sides.
  7. Bake in the oven, flipping after 9-10 minutes and cooking for an additional 4 minutes until golden and crisp.
