Ingredients

  • 2 dark pink beets
  • 2 purple carrots
  • 1 pink onion

Instructions

  1. Peel and segment the pink grapefruit.
  2. Roast the dark pink beets until tender, then slice them.
  3. Peel and julienne the purple carrots.
  4. Thinly slice the pink onion.
  5. In a large bowl, combine the grapefruit segments, roasted beets, purple carrots, and pink onion.
  6. Toast the green pistachios in a pan and add them to the salad.
