Ingredients

- 8 ounces of your favorite pasta (like spaghetti or fettuccine)
- 2 tablespoons of olive oil
- 3 cloves of garlic, minced
- 1 cup of cherry tomatoes, halved
- 1 cup of fresh spinach
- ½ cup of grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Bring a pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large pan, heat the olive oil over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant.
- Add the cherry tomatoes to the pan. Cook for about 5 minutes until they start to soften. Then add the fresh spinach and cook until wilted.
- Add the cooked pasta to the pan. Toss everything together to coat the pasta with the oil, garlic, and veggies. Season with salt and pepper to taste.
- Remove from heat and stir in the grated Parmesan cheese until melted and well mixed.
- Garnish with fresh basil before serving.
Notes
Serve with extra Parmesan and a side of garlic bread for a complete meal. Pairs well with red wine.
