Description

A comforting and delicious pasta dish perfect for romantic dinners, easy to customize with various flavors.


Ingredients

Scale
  • 8 ounces of your favorite pasta (like spaghetti or fettuccine)
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 1 cup of cherry tomatoes, halved
  • 1 cup of fresh spinach
  • ½ cup of grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Bring a pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large pan, heat the olive oil over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant.
  3. Add the cherry tomatoes to the pan. Cook for about 5 minutes until they start to soften. Then add the fresh spinach and cook until wilted.
  4. Add the cooked pasta to the pan. Toss everything together to coat the pasta with the oil, garlic, and veggies. Season with salt and pepper to taste.
  5. Remove from heat and stir in the grated Parmesan cheese until melted and well mixed.
  6. Garnish with fresh basil before serving.

Notes

Serve with extra Parmesan and a side of garlic bread for a complete meal. Pairs well with red wine.
