A vibrant salad featuring heart-shaped roasted beets, fresh greens, cherry tomatoes, creamy feta, and crunchy walnuts, tossed with a tangy balsamic vinaigrette.

- 2 medium beets
- 4 cups mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup feta cheese, crumbled
- 1/4 cup walnuts, chopped
- Balsamic vinaigrette
Instructions
- Preheat the oven to 400°F (200°C).
- Wrap the beets in foil and roast for about 45-60 minutes or until tender.
- Once cooled, peel and slice the beets into heart shapes using a cookie cutter.
- In a large bowl, combine mixed greens, cherry tomatoes, feta cheese, and walnuts.
- Add the heart-shaped beets on top of the salad.
- Drizzle with balsamic vinaigrette and serve.
Notes
Store leftovers in an airtight container in the refrigerator. Keep the dressing separate until ready to serve.
