Description

A vibrant salad featuring heart-shaped roasted beets, fresh greens, cherry tomatoes, creamy feta, and crunchy walnuts, tossed with a tangy balsamic vinaigrette.


Ingredients

  • 2 medium beets
  • 4 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup walnuts, chopped
  • Balsamic vinaigrette

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap the beets in foil and roast for about 45-60 minutes or until tender.
  3. Once cooled, peel and slice the beets into heart shapes using a cookie cutter.
  4. In a large bowl, combine mixed greens, cherry tomatoes, feta cheese, and walnuts.
  5. Add the heart-shaped beets on top of the salad.
  6. Drizzle with balsamic vinaigrette and serve.

Notes

Store leftovers in an airtight container in the refrigerator. Keep the dressing separate until ready to serve.
