- 4 medium potatoes, diced
- 1 lb sausage, sliced
- 1 onion, chopped
- 2 carrots, chopped
- 4 cups chicken broth
- 1 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and carrots, and sauté until the onion is translucent.
- Add the sliced sausage and cook until browned.
- Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and let simmer until the potatoes are tender, about 15-20 minutes.
- Stir in the milk, and season with salt and pepper. Heat through.
- Serve hot, garnished with fresh parsley.
Notes
For a creamier chowder, increase the milk or add heavy cream. Use your favorite sausage for different flavors.
