Description

A hearty soup combining tender potatoes and savory sausage, perfect for chilly days.


Ingredients

  • 4 medium potatoes, diced
  • 1 lb sausage, sliced
  • 1 onion, chopped
  • 2 carrots, chopped
  • 4 cups chicken broth
  • 1 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and carrots, and sauté until the onion is translucent.
  2. Add the sliced sausage and cook until browned.
  3. Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and let simmer until the potatoes are tender, about 15-20 minutes.
  4. Stir in the milk, and season with salt and pepper. Heat through.
  5. Serve hot, garnished with fresh parsley.

Notes

For a creamier chowder, increase the milk or add heavy cream. Use your favorite sausage for different flavors.
