  • 1/2 cup Chopped Pecans (walnuts can be used, or omit for nut-free)
  • 1/4 cup Freshly Squeezed Carrot Juice (natural coloring agent)
  • 1/4 cup Freshly Squeezed Beet Juice (essential for peachy pink hue)
  • 1/2 cup Granulated Sugar (coconut sugar can be swapped for a healthier touch)
  • 46 leaves Mint or Lemon Balm Leaves (optional garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the eggs and sugar until well combined.
  3. Stir in the milk and melted butter. Add the vanilla extract and mix well.
  4. In a separate bowl, sift together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the dulce de leche, chopped pecans, carrot juice, and beet juice until everything is well mixed.
  7. Drop spoonfuls of batter onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes, or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
