Crispy fritters made with fresh zucchini, perfect as a snack or side dish.

- 2 medium zucchinis, grated
- 1 tsp salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 green onions, chopped
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- Oil for frying
Instructions
- Grate the zucchinis and place them in a colander. Sprinkle with salt and let sit for about 10 minutes to draw out moisture.
- Rinse the zucchinis under cold water, then squeeze out excess moisture using a clean kitchen towel.
- Mix the grated zucchini with flour, Parmesan cheese, egg, green onions, black pepper, and garlic powder until well combined in a large bowl.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the hot oil and flatten them slightly.
- Cook for 3-4 minutes on each side until golden brown and crispy.
- Remove and place on paper towels to drain excess oil.
- Serve warm as an appetizer or side dish.
Notes
Serve with a dollop of sour cream or Greek yogurt and a lemon wedge for added flavor.
