Description

Crispy fritters made with fresh zucchini, perfect as a snack or side dish.


Ingredients

Scale
  • 2 medium zucchinis, grated
  • 1 tsp salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 green onions, chopped
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • Oil for frying

Instructions

  1. Grate the zucchinis and place them in a colander. Sprinkle with salt and let sit for about 10 minutes to draw out moisture.
  2. Rinse the zucchinis under cold water, then squeeze out excess moisture using a clean kitchen towel.
  3. Mix the grated zucchini with flour, Parmesan cheese, egg, green onions, black pepper, and garlic powder until well combined in a large bowl.
  4. Heat oil in a skillet over medium heat.
  5. Drop spoonfuls of the zucchini mixture into the hot oil and flatten them slightly.
  6. Cook for 3-4 minutes on each side until golden brown and crispy.
  7. Remove and place on paper towels to drain excess oil.
  8. Serve warm as an appetizer or side dish.

Notes

Serve with a dollop of sour cream or Greek yogurt and a lemon wedge for added flavor.
