Description

A delicious and easy-to-make classic potato salad, perfect for potlucks and outdoor gatherings.


Ingredients

  • 2 pounds of potatoes
  • 1 cup mayonnaise
  • 2 tablespoons mustard
  • 1 tablespoon vinegar
  • 1/2 cup celery, chopped
  • 1/2 cup red onion, chopped
  • Salt and pepper to taste
  • 3 hard-boiled eggs, chopped (optional)

Instructions

  1. Start by peeling and cutting the potatoes into bite-sized pieces.
  2. Boil the potatoes in salted water until they are tender, about 15-20 minutes. Drain and let cool.
  3. In a large bowl, mix together the mayonnaise, mustard, vinegar, salt, and pepper.
  4. Add the cooled potatoes, celery, onion, and eggs (if using) to the bowl and gently toss until everything is nicely coated.
  5. Cover the potato salad and chill in the refrigerator for at least an hour before serving.

Notes

For best texture, use waxy potatoes. Add your favorite ingredients for extra flavor.
