Ingredients

4 chicken breasts

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon paprika

1 tablespoon olive oil

Spinach Cheese Filling

1 cup fresh spinach, chopped (or ¾ cup frozen, squeezed dry)

4 oz cream cheese, softened

½ cup shredded mozzarella

¼ cup grated Parmesan

2 garlic cloves, minced

¼ teaspoon salt

¼ teaspoon black pepper

Instructions

Preheat oven to 400°F (200°C).

Cut a deep pocket into each chicken breast, being careful not to cut through.

In a bowl, mix spinach, cream cheese, mozzarella, Parmesan, garlic, salt, and pepper until creamy.

Stuff each chicken breast generously and secure with toothpicks if needed.

Rub the outside of the chicken with olive oil, salt, pepper, and paprika.

Place chicken breasts in a baking dish and bake for 25–30 minutes or until the chicken reaches 165°F (74°C) and the filling is melted and bubbly.

Let rest 5 minutes before slicing.
