- Preheat oven to 350°F (175°C). Line baking trays with parchment paper.
- Mix dry ingredients: In a bowl, whisk flour, baking soda, baking powder, salt, and cinnamon.
- Mix wet ingredients: In another bowl, whisk melted butter, brown sugar, and white sugar until smooth.
- Add egg, vanilla, and apple cider → mix well.
- Combine: Add dry mixture into wet mixture and stir until a soft dough forms.
- Add apples (optional) and fold in gently.
- Make the coating: Mix sugar + cinnamon in a small bowl.
- Shape: Scoop dough into balls (about 1.5 tbsp each), roll in the cinnamon sugar, and place 2 inches apart.
- Bake: Bake 9–11 minutes, edges set + centers soft.
- Cool: Let rest on tray 5 minutes, then move to rack.
- Glaze: Whisk powdered sugar + apple cider + cinnamon and drizzle over cooled cookies.
