Warm, soft apple fritter donuts covered in a rich brown butter maple vanilla bean glaze.

- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup whole milk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 cup diced apples (peeled)
- Oil for frying
- 3/4 cup powdered sugar
- 1/4 cup brown butter
- 2 tablespoons pure maple syrup
- 1 teaspoon vanilla bean paste
Instructions
- Whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg in a bowl.
- Mix milk, eggs, and melted butter in another bowl.
- Combine wet ingredients with dry ingredients, then gently fold in diced apples.
- Heat oil in a deep fryer or large pot to 375°F (190°C).
- Drop spoonfuls of batter into the hot oil and fry until golden brown, about 3–4 minutes, flipping halfway.
- Remove donuts and drain on paper towels.
- Whisk together powdered sugar, brown butter, maple syrup, and vanilla bean paste until smooth for the glaze.
- Dip each donut into the glaze while still warm and let set before serving.
Notes
Serve warm for best texture and taste. Store cooled donuts in an airtight container for up to 2 days, or freeze unfrosted donuts for up to 1 month.
