Ingredients

- 2 lbs beef, cut into cubes
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1 tsp paprika
- Salt and pepper to taste
- 2 cups beef broth
- 1 can (14 oz) diced tomatoes
- 1 cup dried apricots, halved
- 1/2 cup almonds, toasted
- Fresh cilantro, for garnish
Instructions
- Heat some oil in a large tagine or heavy pot over medium heat.
- Add the onions and cook until soft, then stir in garlic and spices (cumin, coriander, ginger, cinnamon, paprika). Cook for 1-2 minutes until aromatic.
- Add the beef to the pot and brown on all sides.
- Pour in the beef broth and tomatoes, then bring to a simmer.
- Add the dried apricots and season with salt and pepper.
- Cover and reduce the heat, letting it cook slowly for about 90 minutes until the beef is tender.
- Serve hot, garnished with toasted almonds and fresh cilantro.
Notes
Pairs well with couscous or crusty bread. Allow leftovers to cool before refrigerating in an airtight container.
