Description

A celebration of flavors with tender beef, spices, and dried fruits, perfect for family dinners.


Ingredients

  • 2 lbs beef, cut into cubes
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 cups beef broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup dried apricots, halved
  • 1/2 cup almonds, toasted
  • Fresh cilantro, for garnish

Instructions

  1. Heat some oil in a large tagine or heavy pot over medium heat.
  2. Add the onions and cook until soft, then stir in garlic and spices (cumin, coriander, ginger, cinnamon, paprika). Cook for 1-2 minutes until aromatic.
  3. Add the beef to the pot and brown on all sides.
  4. Pour in the beef broth and tomatoes, then bring to a simmer.
  5. Add the dried apricots and season with salt and pepper.
  6. Cover and reduce the heat, letting it cook slowly for about 90 minutes until the beef is tender.
  7. Serve hot, garnished with toasted almonds and fresh cilantro.

Notes

Pairs well with couscous or crusty bread. Allow leftovers to cool before refrigerating in an airtight container.
