Description
A refreshing cold soup from Spain, perfect for warm weather and made with fresh vegetables.
Ingredients

- 6 ripe tomatoes
- 1 cucumber
- 1 bell pepper (red or green)
- 1 small red onion
- 2 cloves of garlic
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Chop the tomatoes, cucumber, bell pepper, and onion into small pieces.
- In a blender, combine the chopped vegetables, garlic, olive oil, and red wine vinegar.
- Blend until smooth.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 120 minutes before serving.
- Serve cold, garnished with fresh basil or parsley.
Notes
For a chunkier texture, reserve some chopped vegetables to stir in after blending. Pairs well with crusty bread.
