Description

A refreshing cold soup from Spain, perfect for warm weather and made with fresh vegetables.


Ingredients

Scale
  • 6 ripe tomatoes
  • 1 cucumber
  • 1 bell pepper (red or green)
  • 1 small red onion
  • 2 cloves of garlic
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Chop the tomatoes, cucumber, bell pepper, and onion into small pieces.
  2. In a blender, combine the chopped vegetables, garlic, olive oil, and red wine vinegar.
  3. Blend until smooth.
  4. Season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 120 minutes before serving.
  6. Serve cold, garnished with fresh basil or parsley.

Notes

For a chunkier texture, reserve some chopped vegetables to stir in after blending. Pairs well with crusty bread.
