Instructions
- Toast the slices of bread to your liking.
- Mash the ripe avocados in a bowl with a fork. Add lemon juice, salt, and pepper to taste if desired.
- Spread the mashed avocado evenly on the toasted bread.
- Top with halved cherry tomatoes.
- Drizzle with olive oil if desired, and sprinkle fresh herbs on top.
- Serve immediately.
Notes
Best eaten fresh. If storing, keep mashed avocado in an airtight container with lemon juice to slow browning.
