Description

Delicious and nutritious breakfast burritos perfect for busy school mornings.


Ingredients

  • 4 flour tortillas
  • 6 eggs
  • 1 cup shredded cheese (cheddar or your favorite)
  • 1 cup cooked sausage or bacon (optional)
  • 1 cup diced vegetables (such as bell peppers and onions)
  • Salt and pepper to taste
  • Salsa (for serving)

Instructions

  1. In a bowl, crack the eggs and beat them with salt and pepper.
  2. In a skillet, cook any sausage or bacon, if using. Add the diced vegetables and cook until they are soft.
  3. Pour the beaten eggs into the skillet. Stir gently until the eggs are fully cooked.
  4. Remove from heat and mix in the shredded cheese.
  5. Place a portion of the egg mixture in the center of each tortilla. Roll the tortilla tightly to form a burrito.
  6. Serve with salsa on the side.

Notes

Wrap burritos tightly in plastic wrap or foil to store. They can be refrigerated for up to three days or frozen for longer storage. Reheat in microwave for 1-2 minutes.
