- 1 cup semolina
- 1 cup all-purpose flour
- 1 ½ cups warm water
- 1 tsp active dry yeast
- 1 tsp baking powder
- ½ tsp salt
- 1 tbsp sugar
- 1 tbsp olive oil or melted butter (for serving)
Instructions
- Combine the yeast, sugar, and warm water in a mixing bowl and let it sit for about 10 minutes until frothy.
- Mix the semolina, all-purpose flour, baking powder, and salt in another bowl.
- Add the yeast mixture to the dry ingredients and whisk until smooth.
- Cover the batter and let it rest for about 30 minutes to 1 hour until bubbly.
- Heat a non-stick skillet over medium heat and pour a ladleful of batter into the skillet, spreading gently to form a round pancake.
- Cook until the surface is covered with holes and the pancake is set (do not flip).
- Remove from the skillet and repeat with the remaining batter.
- Serve warm with olive oil or melted butter, or enjoy with honey or syrup.
