- 2 pounds baby potatoes
- 8 ounces feta cheese
- 1/4 cup olive oil
- Juice of 1 lemon
- 1 tablespoon lemon zest
- 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the baby potatoes with olive oil, lemon juice, lemon zest, thyme, salt, and pepper until well coated.
- Spread the potatoes in a single layer on a baking sheet.
- Place the feta cheese block in the center of the potatoes.
- Bake for 30-40 minutes, or until the potatoes are fork-tender and golden brown.
- Remove from the oven and let cool slightly.
