Description

A refreshing and colorful pasta salad packed with veggies and a light dressing, perfect for picnics and potlucks.


Ingredients

  • 2 cups of cooked pasta
  • 2 cups of broccoli florets
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of red onion, diced
  • 1/2 cup of shredded cheese (cheddar or mozzarella)
  • 1/4 cup of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste

Instructions

  1. Combine the cooked pasta and broccoli florets in a large bowl.
  2. Add in the cherry tomatoes, red onion, and shredded cheese.
  3. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
  4. Pour the dressing over the pasta salad and toss to combine.
