A refreshing and colorful pasta salad packed with veggies and a light dressing, perfect for picnics and potlucks.
Ingredients

- 2 cups of cooked pasta
- 2 cups of broccoli florets
- 1 cup of cherry tomatoes, halved
- 1/2 cup of red onion, diced
- 1/2 cup of shredded cheese (cheddar or mozzarella)
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- Salt and pepper to taste
Instructions
- Combine the cooked pasta and broccoli florets in a large bowl.
- Add in the cherry tomatoes, red onion, and shredded cheese.
- Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
- Pour the dressing over the pasta salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving. Enjoy at picnics or potlucks!
Notes
Serve chilled for the best flavor. Can store leftovers in an airtight container for 3-5 days.
