Description

Delicious and crispy scored potatoes that are easy to make and perfect for any meal.


Ingredients

Scale
  • 2 lbs baby potatoes
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme or rosemary (optional)
  • Salt and pepper, to taste
  • Chopped fresh parsley (for garnish)
  • Optional: Grated Parmesan cheese

Instructions

  1. Preheat the oven to 425°F (220°C) and line a sheet pan with parchment paper.
  2. Wash and dry the potatoes. Score shallow cuts around each potato.
  3. Toss potatoes with olive oil, garlic powder, paprika, herbs, salt, and pepper.
  4. Arrange potatoes cut-side up on the pan.
  5. Bake for 40–50 minutes until golden and crispy.
  6. Optional: Sprinkle Parmesan on hot potatoes.
  7. Garnish with parsley and serve immediately.

Notes

Score the potatoes evenly for uniform cooking. Experiment with different herbs for unique flavors. For more crunch, broil for the last few minutes.
