A tasty and healthy snack made with Greek yogurt and blueberries, perfect for any time of the day.
Ingredients

- 1½ cups (370g) plain Greek yogurt
- 1 tablespoon honey or maple syrup (or erythritol for keto)
- ½ teaspoon vanilla extract
- ¾ cup (100g) fresh or frozen blueberries
- 1 teaspoon lemon juice
- 1 teaspoon honey (optional)
- 1 teaspoon chia seeds (optional)
Instructions
- Prepare the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, lemon juice, and optional honey. Cook for 5–6 minutes, stirring frequently, until the berries soften. Mash lightly for a jam-like consistency. Remove from heat, mix in chia seeds if using, and cool completely.
- Make the Yogurt Base: In a medium bowl, whisk together the Greek yogurt, vanilla extract, and honey until smooth. Adjust sweetness to taste.
- Assemble the Bites: Spoon about 1 tablespoon of the yogurt mixture into each cavity of a silicone mini muffin tray. Fill about ¾ of the way. Add ½ teaspoon of the cooled blueberry compote on top of each yogurt portion and swirl gently.
- Freeze: Place the tray in the freezer for at least 120 minutes, or until firm.
- Serve & Store: Remove the bites from the molds and store in an airtight container in the freezer. Let sit at room temperature for 2–4 minutes before serving.
Notes
For added sweetness, consider using flavored Greek yogurt. Substitute blueberries with other fruits for different flavors.
