A fun and spooky dessert perfect for Halloween or themed parties, featuring layers of moist cake and sweet raspberry jam.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon vinegar
  • 1/2 teaspoon salt
  • Pink buttercream frosting
  • Raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a mixing bowl, combine flour, sugar, baking soda, and salt.
  3. In another bowl, mix together the oil, buttermilk, eggs, red food coloring, and vanilla.
  4. Combine wet and dry ingredients until smooth.
  5. Pour the batter equally into the prepared pans.
  6. Bake for about 25-30 minutes or until a toothpick comes out clean.
  7. Allow the cakes to cool completely.
  8. Level the cakes and spread raspberry jam between the layers, then frost the top and sides with pink buttercream.
  9. Decorate to resemble a brain for a spooky Halloween touch.

Notes

For a more intense red color, add more food coloring. Ensure cakes are completely cooled before frosting.
