  • 1 French baguette, sliced into 1/2 inch thick pieces
  • 2 large ripe tomatoes, diced
  • 1 cup fresh mozzarella, diced
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons extra-virgin olive oil, plus more for brushing
  • 1 tablespoon balsamic vinegar
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper. Lay the sliced baguette pieces in a single layer on the sheet.
  3. Brush each slice of bread lightly with olive oil, ensuring even coverage.
  4. Place the baking sheet in the oven and toast the bread for about 5-7 minutes, or until golden and crispy. Remove from oven and set aside.
  5. In a large bowl, combine the diced tomatoes, mozzarella, and basil.
  6. Add the minced garlic, 2 tablespoons of olive oil, and balsamic vinegar to the bowl. Stir gently to combine.
  7. Season the mixture with salt and freshly ground black pepper to taste.
  8. Allow the mixture to sit for about 10 minutes at room temperature, letting the flavors meld.
  9. Spoon a generous amount of the tomato-mozzarella topping onto each toasted baguette slice.
  10. Drizzle a little more olive oil on top if desired.
  11. Serve immediately and enjoy the burst of Italian flavors.

Notes

Use ripe tomatoes for the best flavor. Toast bread until just golden for extra crunch.
