- 1 French baguette, sliced into 1/2 inch thick pieces
- 2 large ripe tomatoes, diced
- 1 cup fresh mozzarella, diced
- 1/4 cup fresh basil leaves, chopped
- 2 cloves garlic, minced
- 2 tablespoons extra-virgin olive oil, plus more for brushing
- 1 tablespoon balsamic vinegar
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper. Lay the sliced baguette pieces in a single layer on the sheet.
- Brush each slice of bread lightly with olive oil, ensuring even coverage.
- Place the baking sheet in the oven and toast the bread for about 5-7 minutes, or until golden and crispy. Remove from oven and set aside.
- In a large bowl, combine the diced tomatoes, mozzarella, and basil.
- Add the minced garlic, 2 tablespoons of olive oil, and balsamic vinegar to the bowl. Stir gently to combine.
- Season the mixture with salt and freshly ground black pepper to taste.
- Allow the mixture to sit for about 10 minutes at room temperature, letting the flavors meld.
- Spoon a generous amount of the tomato-mozzarella topping onto each toasted baguette slice.
- Drizzle a little more olive oil on top if desired.
- Serve immediately and enjoy the burst of Italian flavors.
Notes
Use ripe tomatoes for the best flavor. Toast bread until just golden for extra crunch.
