Description

A creamy, sweet smoothie that tastes like carrot cake but is quick and healthy, perfect for breakfast or a post-workout snack.


Ingredients

Scale
  • 1 raw carrot, peeled and chopped
  • 1 banana
  • 1/2 cup pineapple chunks
  • 1 cup coconut milk
  • 1/2 cup Greek yogurt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon honey or maple syrup (optional)
  • Ice cubes (optional)

Instructions

  1. In a blender, combine the raw carrot, banana, pineapple, coconut milk, Greek yogurt, cinnamon, nutmeg, and honey or maple syrup if using.
  2. Blend until smooth, adding ice cubes for desired thickness.
  3. Pour into a glass and enjoy as a healthy breakfast or post-workout snack.

Notes

Pour into a tall glass and top with a sprinkle of cinnamon or crushed walnuts if desired. Keep in a sealed jar in the fridge for up to 24 hours.
