Description

These Cheesy Muffin Tin Cottage Cheese Egg Bites are quick, soft egg cups perfect for busy mornings or meal prep, loaded with protein from cottage cheese.


Ingredients

  • 1 cup cottage cheese
  • 6 large eggs
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup diced vegetables (spinach, bell peppers, or your choice)
  • Salt and pepper to taste
  • Optional: cooked bacon or sausage bits

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. Whisk together the eggs and cottage cheese until well combined.
  3. Stir in the shredded cheese, diced vegetables, and optional meat if using.
  4. Season with salt and pepper.
  5. Pour the mixture evenly into the muffin tin cups, filling each about 3/4 full.
  6. Bake for 18-20 minutes or until the egg bites are set and lightly golden on top.
  7. Allow to cool slightly before removing from the muffin tin. Serve warm or store in the fridge for meal prep.

Notes

Don’t overfill the cups; fill about 3/4 full to avoid spills. Drain very watery vegetables or cook them first so the bites are not soggy. Use a silicone muffin tin or nonstick spray for easy removal. Let them cool a few minutes before removing so they keep their shape.
