- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon turmeric
- 1/2 cup green olives, pitted
- 1 preserved lemon, sliced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pot over medium heat. Add chopped onions and sauté until soft.
- Stir in garlic, cumin, ginger, cinnamon, turmeric, salt, and pepper, cooking for another minute.
- Add the chicken thighs, browning them on all sides.
- Pour in enough water to cover the chicken, and bring it to a simmer.
- Cover the pot and let it cook on low heat for about 40 minutes.
- Add the green olives and preserved lemon, cooking for an additional 10 minutes.
- Serve hot, garnished with fresh cilantro.
