Description

Quick and easy chocolate chip pancakes that are warm, soft, and perfect for any day.


Ingredients

Scale
  • 1 1/2 cups all-purpose flour, measured then sifted
  • 2 ½ tsp baking powder
  • ¼ tsp salt
  • 2 Tbsp granulated sugar
  • 1 cup whole milk
  • 2 Tbsp whole milk
  • 1 large egg
  • 2 Tbsp unsalted butter, melted and cooled
  • 1 cup chocolate chip morsels
  • 2 tsp canola oil, divided for cooking
  • 2 Tbsp unsalted butter, divided for cooking

Instructions

  1. Mix dry ingredients in one bowl.
  2. Whisk wet ingredients in another bowl.
  3. Pour wet into dry and stir until mostly smooth. Do not overmix.
  4. Fold in chocolate chip morsels.
  5. Heat a non-stick skillet with butter and oil.
  6. Pour batter in 1/4 cup portions and cook until bubbles form.
  7. Flip and cook the other side until golden.
  8. Stack pancakes and add extra chocolate chips or syrup.

Notes

Do not overmix the batter. Use a 1/4 cup scoop for even pancakes. Keep the skillet at medium heat.
