Quick and easy chocolate chip pancakes that are warm, soft, and perfect for any day.
Ingredients

- 1 1/2 cups all-purpose flour, measured then sifted
- 2 ½ tsp baking powder
- ¼ tsp salt
- 2 Tbsp granulated sugar
- 1 cup whole milk
- 2 Tbsp whole milk
- 1 large egg
- 2 Tbsp unsalted butter, melted and cooled
- 1 cup chocolate chip morsels
- 2 tsp canola oil, divided for cooking
- 2 Tbsp unsalted butter, divided for cooking
Instructions
- Mix dry ingredients in one bowl.
- Whisk wet ingredients in another bowl.
- Pour wet into dry and stir until mostly smooth. Do not overmix.
- Fold in chocolate chip morsels.
- Heat a non-stick skillet with butter and oil.
- Pour batter in 1/4 cup portions and cook until bubbles form.
- Flip and cook the other side until golden.
- Stack pancakes and add extra chocolate chips or syrup.
Notes
Do not overmix the batter. Use a 1/4 cup scoop for even pancakes. Keep the skillet at medium heat.
