- 1 cup sweetened shredded coconut
- 1 cup chopped pecans
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 8 oz cream cheese, softened
- 1 cup semi-sweet chocolate chips
- 1 teaspoon vanilla extract
- 1/4 cup coconut milk
- 1 tablespoon gelatin (optional, for thickening)
Instructions
- Preheat the oven and bake the pie crust according to package instructions. Let it cool.
- Beat the cream cheese and powdered sugar in a medium bowl until smooth.
- Melt the chocolate chips in a microwave or double boiler, then mix it into the cream cheese mixture.
- Stir in the coconut milk and vanilla extract.
- Whip the heavy cream in a separate bowl until soft peaks form, then fold it into the chocolate mixture.
- Add in the shredded coconut and chopped pecans, and gently mix until combined.
- Pour the filling into the cooled pie crust and refrigerate for at least 240 minutes or until set.
- Top with additional whipped cream, coconut, and pecans before serving (optional).
Notes
For a thicker filling, consider adding optional gelatin. Use dark chocolate chips for a richer flavor.
