- 1 head of romaine lettuce, chopped
- 1 cup of mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/2 cup shredded carrots
- 1/4 cup red onions, sliced
- 1/4 cup black olives, sliced
- 1/4 cup pepperoncini peppers
- 1/2 cup shredded mozzarella cheese
- 1/2 cup croutons
- Olive oil
- Red wine vinegar
- Italian seasoning
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chopped romaine lettuce and mixed greens.
- Add the cherry tomatoes, shredded carrots, red onions, black olives, and pepperoncini.
- For the dressing, mix olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a small jar. Shake well.
- Pour the dressing over the salad and toss gently until everything is well-coated.
- Top with mozzarella cheese and croutons before serving.
