Ingredients

  • 1 head of romaine lettuce, chopped
  • 1 cup of mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup shredded carrots
  • 1/4 cup red onions, sliced
  • 1/4 cup black olives, sliced
  • 1/4 cup pepperoncini peppers
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup croutons
  • Olive oil
  • Red wine vinegar
  • Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chopped romaine lettuce and mixed greens.
  2. Add the cherry tomatoes, shredded carrots, red onions, black olives, and pepperoncini.
  3. For the dressing, mix olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a small jar. Shake well.
