Description
A warm and hearty French Chestnut Soup, creamy and nutty, perfect for chilly days.
Ingredients

- 1 onion (sliced)
- 1 lb of chestnuts (chopped)
- 2 tsp of rosemary
- 2.5 cups of water
- 1 vegetable bouillon cube
- 1.5 cups of milk
- 8 chestnuts (whole)
- 1 tbsp of butter
- Salt and black pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pan on medium heat.
- Add the sliced onion and a pinch of salt, and cook for 4 minutes until soft.
- Add the chopped chestnuts and cook for another 2 minutes.
- Pour in the water and add rosemary. Cook until boiling.
- Once boiling, add the vegetable bouillon cube and cook for 15 minutes.
- Remove from heat and blend until smooth.
- Return the blended soup to heat, add milk, and cook for another 5 minutes.
- Season with salt and black pepper to taste.
- In a separate frying pan, heat butter on low, add the 8 whole chestnuts, and cook for 10 minutes until toasted.
Notes
For thicker soup, add more chestnuts or reduce milk. For a spicy kick, include red pepper flakes while cooking.
