French Chestnut Soup

Description

A warm and hearty French Chestnut Soup, creamy and nutty, perfect for chilly days.


Ingredients

Scale
  • 1 onion (sliced)
  • 1 lb of chestnuts (chopped)
  • 2 tsp of rosemary
  • 2.5 cups of water
  • 1 vegetable bouillon cube
  • 1.5 cups of milk
  • 8 chestnuts (whole)
  • 1 tbsp of butter
  • Salt and black pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large pan on medium heat.
  2. Add the sliced onion and a pinch of salt, and cook for 4 minutes until soft.
  3. Add the chopped chestnuts and cook for another 2 minutes.
  4. Pour in the water and add rosemary. Cook until boiling.
  5. Once boiling, add the vegetable bouillon cube and cook for 15 minutes.
  6. Remove from heat and blend until smooth.
  7. Return the blended soup to heat, add milk, and cook for another 5 minutes.
  8. Season with salt and black pepper to taste.
  9. In a separate frying pan, heat butter on low, add the 8 whole chestnuts, and cook for 10 minutes until toasted.

Notes

For thicker soup, add more chestnuts or reduce milk. For a spicy kick, include red pepper flakes while cooking.
