Description

Delightful and crispy potato pancakes, perfect for any meal. Great served alone or with various toppings.


Ingredients

  • 4 large russet potatoes
  • 1 small onion
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil (for frying)

Instructions

  1. Start by peeling the potatoes and grating them using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and wring out the excess moisture.
  2. Grate the onion and mix it with the potatoes.
  3. In a large bowl, combine the grated potatoes and onion with the eggs, flour, salt, and black pepper. Stir well until all ingredients are mixed.
  4. Heat a generous amount of vegetable oil in a large skillet over medium-high heat.
  5. For each pancake, scoop a spoonful of the potato mixture into the skillet and flatten it slightly with the back of the spoon.
  6. Fry the pancakes for about 3-4 minutes on each side until they are golden brown and crispy.
  7. Once cooked, transfer the pancakes to a paper towel-lined plate to drain excess oil.

Notes

Serve with sour cream, applesauce, or fresh herbs. Store leftovers in an airtight container for up to 3 days.
