- 4 large russet potatoes
- 1 small onion
- 2 eggs
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil (for frying)
Instructions
- Start by peeling the potatoes and grating them using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and wring out the excess moisture.
- Grate the onion and mix it with the potatoes.
- In a large bowl, combine the grated potatoes and onion with the eggs, flour, salt, and black pepper. Stir well until all ingredients are mixed.
- Heat a generous amount of vegetable oil in a large skillet over medium-high heat.
- For each pancake, scoop a spoonful of the potato mixture into the skillet and flatten it slightly with the back of the spoon.
- Fry the pancakes for about 3-4 minutes on each side until they are golden brown and crispy.
- Once cooked, transfer the pancakes to a paper towel-lined plate to drain excess oil.
Notes
Serve with sour cream, applesauce, or fresh herbs. Store leftovers in an airtight container for up to 3 days.
