Description

A delicious and easy meal that combines shrimp, potatoes, corn, and smoked sausage, all cooked in a flavorful broth.


Ingredients

  • 1 pound large shrimp, deveined and tails removed
  • 1 pound baby potatoes, halved
  • 4 ears corn, cut into halves or thirds
  • 1/2 pound smoked sausage, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon Old Bay seasoning
  • 1 lemon, sliced
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Combine the potatoes, corn, sausage, garlic, and Old Bay seasoning in a crock pot.
  2. Pour in the vegetable broth and stir to combine.
  3. Layer the shrimp and lemon slices on top.
  4. Cook on low for 240-300 minutes or on high for 120-180 minutes, until the shrimp are pink and cooked through, and the potatoes are tender.
  5. Season with salt and pepper to taste and garnish with fresh parsley before serving.

Notes

Make sure not to overcook the shrimp, as they can become tough. Fresh seafood is best, but frozen shrimp will also work if thawed.
