Ingredients

  • 1 cup dried green or brown lentils
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 6 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery; sauté until softened, about 5-7 minutes.
  3. Stir in the cumin, coriander, turmeric, and cinnamon; cook for 1 minute until fragrant.
  4. Add the lentils, vegetable broth, and diced tomatoes. Bring to a boil, then reduce the heat and simmer for 30-35 minutes, or until lentils are tender.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh cilantro.

Notes

For added creaminess, consider blending a portion of the soup after it has cooked. You can adjust the spice levels according to your taste.
