Ingredients

- 1 cup dried green or brown lentils
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1/2 teaspoon cinnamon
- 6 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the lentils under cold water and set aside.
- Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery; sauté until softened, about 5-7 minutes.
- Stir in the cumin, coriander, turmeric, and cinnamon; cook for 1 minute until fragrant.
- Add the lentils, vegetable broth, and diced tomatoes. Bring to a boil, then reduce the heat and simmer for 30-35 minutes, or until lentils are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
Notes
For added creaminess, consider blending a portion of the soup after it has cooked. You can adjust the spice levels according to your taste.
