- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, chopped
- 1 can diced tomatoes (14.5 oz)
- 2 cups vegetable or fish broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic. Cook until the onion is soft, about 3-4 minutes.
- Add the chopped bell pepper and cook for another 2 minutes.
- Pour in the diced tomatoes and broth. Stir in the thyme, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and let it simmer for about 10 minutes.
- Add the fish fillets to the pot. Cook for another 5-7 minutes or until the fish is cooked through and flakes easily with a fork.
- Taste and adjust the seasoning if needed.
- Serve hot, garnished with fresh parsley.
Notes
Use firm white fish like haddock or halibut. Add more vegetables for a heartier stew, and adjust seasoning as desired.
