- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup fresh mozzarella cheese, sliced
- 2 large tomatoes, sliced
- Fresh basil leaves
- Balsamic glaze (optional)
Instructions
- Preheat the grill to medium-high heat.
- Brush the chicken breasts with olive oil and season with salt and pepper.
- Grill the chicken for 6-7 minutes on each side, until fully cooked.
- Place slices of mozzarella and tomato on top of the chicken during the last few minutes of grilling.
- Remove from the grill once the cheese has melted and top with fresh basil.
- Drizzle with balsamic glaze if desired. Serve and enjoy!

Let the chicken rest for a few minutes after grilling to keep it juicy. Use fresh mozzarella for the best taste.
