Description

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup green beans, chopped
  • 1 cup zucchini, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  3. Stir in the garlic and cook for an additional minute.
  4. Pour in the vegetable broth and add the diced tomatoes, green beans, zucchini, thyme, basil, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20-30 minutes until the vegetables are tender.
  6. Serve hot.

Notes

For a creamier texture, blend a portion of the soup. Freeze any leftovers for up to 3 months.
