- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 3/4 cup buttermilk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- Vegetable oil for frying
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Mix flour, sugar, baking powder, baking soda, salt, and nutmeg in a bowl.
- Whisk together buttermilk, egg, and melted butter in another bowl.
- Combine the wet and dry ingredients until just blended.
- Roll out the dough on a floured surface to about 1/2 inch thickness and cut into squares.
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
- Fry each square until golden brown, about 1-2 minutes on each side.
- Remove from oil and drain on paper towels.
- Whisk together powdered sugar, milk, and vanilla for the glaze until smooth.
- Dip the warm beignet squares in the glaze and let it set before serving.
Notes
Serve warm and enjoy! You can dust with extra powdered sugar if desired. Keep a close eye on oil temperature while frying.
