Ingredients
For the Chicken
1 lb chicken breast, cut into small bites
1 tablespoon olive oil
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika
For the Vegetables
1 cup broccoli florets
1 red bell pepper, sliced
1 cup carrots, shredded or thinly sliced
1 cup cooked rice (white or brown), for serving
Gluten-Free Garlic Sauce
3 tablespoons gluten-free soy sauce (tamari)
2 tablespoons honey
1 tablespoon rice vinegar (gluten-free)
2 garlic cloves, minced
1 teaspoon grated ginger
½ cup water
1 tablespoon cornstarch mixed with 1 tablespoon water
Instructions
Heat olive oil in a skillet over medium-high heat. Add chicken, salt, pepper, and paprika. Cook 5–7 minutes until golden and cooked through. Remove and set aside.
In the same skillet, add broccoli and bell pepper. Cook 3 minutes until softened but still crisp. Add carrots and cook 1 minute.
Whisk tamari, honey, rice vinegar, garlic, ginger, water, and cornstarch slurry.
Pour sauce into the skillet and simmer until thick and glossy, about 1–2 minutes.
Return the cooked chicken, toss to coat, and cook 1 minute more.
Serve over cooked rice and top with green onions or sesame seeds if desired.
