- 12 oz gluten-free elbow macaroni
- 3 tbsp butter
- 3 tbsp gluten-free all-purpose flour (or cornstarch)
- 3 cups whole milk (warm)
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ½ tsp garlic powder
- ½ tsp paprika
- Salt & black pepper, to taste

- Cook gluten-free pasta according to package directions until al dente, then drain.
- In a saucepan, melt butter over medium heat. Whisk in gluten-free flour (or cornstarch) and cook for 1 minute.
