Delightful and healthy Granola Breakfast Tarts combining nutty granola, creamy Greek yogurt, and fresh berries.
Ingredients

- 2 cups granola
- 1/4 cup honey
- 1/4 cup melted coconut oil
- 1/2 cup Greek yogurt
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- Fresh mint leaves (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the granola, honey, and melted coconut oil in a mixing bowl. Stir until the granola is fully coated.
- Press the mixture into the bottom and up the sides of a muffin tin to form tart shells.
- Bake for 10-12 minutes until golden brown. Remove from the oven and let cool.
- Fill each tart shell with Greek yogurt and top with mixed berries.
- Garnish with fresh mint leaves and serve.
Notes
For best results, store tart shells separately from the filling to maintain their crunch.
