Description

Delightful and healthy Granola Breakfast Tarts combining nutty granola, creamy Greek yogurt, and fresh berries.


Ingredients

Scale
  • 2 cups granola
  • 1/4 cup honey
  • 1/4 cup melted coconut oil
  • 1/2 cup Greek yogurt
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • Fresh mint leaves (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the granola, honey, and melted coconut oil in a mixing bowl. Stir until the granola is fully coated.
  3. Press the mixture into the bottom and up the sides of a muffin tin to form tart shells.
  4. Bake for 10-12 minutes until golden brown. Remove from the oven and let cool.
  5. Fill each tart shell with Greek yogurt and top with mixed berries.
  6. Garnish with fresh mint leaves and serve.

Notes

For best results, store tart shells separately from the filling to maintain their crunch.
