Description

Enjoy a healthy meal packed with protein, fresh veggies, and whole grains in these customizable Greek Chicken Bowls.


Ingredients

  • 2 Chicken breasts
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 Cucumber, chopped
  • 2 Tomatoes, chopped
  • 1 Red onion, chopped
  • 1/2 cup Feta cheese, crumbled
  • 1/2 cup Kalamata olives
  • 1 cup Cooked quinoa or rice
  • 1/2 cup Tzatziki sauce (Greek yogurt, cucumber, garlic, lemon juice, dill)

Instructions

  1. Marinate the chicken breasts in olive oil, lemon juice, minced garlic, salt, and pepper for at least 30 minutes.
  2. Grill or pan-cook the chicken until fully cooked.
  3. Prepare the veggies by chopping cucumber, tomatoes, and red onion.
  4. Cook quinoa or rice according to package instructions.
  5. Mix Greek yogurt with grated cucumber, minced garlic, lemon juice, and dill to make the tzatziki sauce.
  6. Slice the cooked chicken into strips.
  7. Assemble the bowls by layering quinoa or rice, fresh veggies, sliced chicken, feta cheese, and Kalamata olives.
  8. Drizzle with tzatziki sauce and serve immediately.

Notes

For the best flavor, marinate the chicken for a few hours if you have time. Feel free to change the veggies based on availability.
